mexican rice

1 cup arborio rice
1 tablespoon vegetable oil
1/4 cup red capsicum
1/4 cup yellow capsicum
1/4 cup green capsicum
1 litre chicken or vegetable stock
1 tablespoon tomato paste

Mexican Rice Directions

  1. heat oil in pan
  2. Fry onions and capsicum together
  3. Add rice and coat in oil
  4. Add a small amount of stock allow to cook and stir occasionally adding stock until the rice is cooked
  5. Add tomato paste and stir in.
  6. Serve with enchiladas and salad. Or meatballs
